Pecan Carrot Cake Bliss Balls

First off, you have probably noticed that many of my sweets contain the delightful mejdool date. I’m sure you are well aware by now but just in case you missed it – I LOVE medjool dates. I’ll eat them plain or stuffed with nuts dipped in tahini as a snack, but I also use them in many of my sweet dishes.

Medjool dates are FRESH FRUIT. Yes indeed, though most people think of dates as a dried fruit because they’re thinking of the dates you buy in the baking section of your local supermarket.  Medjool dates are harvested from the date palm, cleaned, sorted, and packaged right away. There’s no processing and they’re never physically or chemically dried. That’s why you’ll find them in the produce section at your supermarket.

Medjool dates are one of the most popular dates and are known for their large size, soft texture, and rich flavor. They have a rich, almost caramel-like taste and a soft, chewy texture whereas regular dried dates are usually smaller, have a firm dry flesh with a sweet yet delicate flavor. It is this yummy soft caramel taste and natural sweetness that makes them so perfect for vegan and vegetarian recipes and for those wishing to avoid refined sugar in their diets.

And did you know there are over 1,500 different date varieties grown in the world — they grow in warm climates like California, Arizona, Florida, and the Middle East. Wow, I could so easily go on a date holiday – I would be in seventh heaven. So here there are my carrot cake bliss balls.

Ingredients

  • 150 gms of almonds
  • 150 gms of pecans
  • 225 gms of medjool dates
  • A medium carrot grated
  • 1 tsp. of cinnamon
  • 1/2 tsp. of ginger
  • 1/2 tsp. of freshly ground nutmeg
  • Pinch of ground cloves
  • Pinch of salt
  • 1 cup of LSA
  • Optional: 1/2 cup of pecans processed to roll balls in

Method

  • Roughly process the pecans in a food processor so they are still chunky and set aside.
  • Process almonds until crumbly. Add in LSA spices, dates, and carrots process again.
  • Remove mixture from food-processor into a bowl and stir in chunky pecans.
  • Roll into balls and roll in finely chopped pecans
  • Store in the fridge
